Curtis Pritz is the chef owner of Mirum Farm and Table, and is in his first year of growing with the incubator program in 2021. Curtis' life has revolved around food since the first day he made pancakes from scratch and had his mind blown by the magic of culinary creation. The farm side of food came from his desire to learn about how and where all of the incredible ingredients from this region came from. After completing an internship with Cloud Mountain Farm Center, Curtis continued on to a permanent production staff position, where his resolve to include the 'Farm' in 'Farm to Table' was solidified, and he applied to the incubator program for 2021. Curtis' long term goal is to establish a complete seed to table business that closes the loop from field to plate, including a brick and mortar home for the 'Table' portion of the business.
